Ingredients

  • 300 g lean minced turkey
  • 1 tbsp garlic-infused olive oil
  • 1 red pepper diced
  • 1 corgette diced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp chili powder adjust to taste
  • Salt and pepper adjust to taste
  • Lettuce leaves for serving
  • Tomato salsa for serving (check for low FODMAP ingredients)
  • Fresh coriander cilantro, for garnish

Instructions

  • Heat the garlic-infused olive oil in a frying pan over medium heat.
  • Add the minced turkey to the skillet and cook until browned, breaking it up with a spatula.
  • Add the diced red pepper and courgette to the frying pan and cook for a few minutes until the vegetables are tender.
  • Sprinkle the ground cumin, paprika, dried oregano, chili powder, salt, and pepper over the turkey mixture. Stir well to combine and cook for an additional 2-3 minutes.
  • Remove from heat and assemble the tacos by spooning the turkey mixture into lettuce leaves.
  • Top with tomato salsa and garnish with fresh coriander.

Notes

You can add other low FODMAP toppings such as grated cheese (if tolerated) or lactose-free sour cream.
Serve with a side of low FODMAP tortilla chips, if desired
