Ingredients
- 300 g lean minced turkey
- 1 tbsp garlic-infused olive oil
- 1 red pepper diced
- 1 corgette diced
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 1/4 tsp chili powder adjust to taste
- Salt and pepper adjust to taste
- Lettuce leaves for serving
- Tomato salsa for serving (check for low FODMAP ingredients)
- Fresh coriander cilantro, for garnish
Instructions
- Heat the garlic-infused olive oil in a frying pan over medium heat.
- Add the minced turkey to the skillet and cook until browned, breaking it up with a spatula.
- Add the diced red pepper and courgette to the frying pan and cook for a few minutes until the vegetables are tender.
- Sprinkle the ground cumin, paprika, dried oregano, chili powder, salt, and pepper over the turkey mixture. Stir well to combine and cook for an additional 2-3 minutes.
- Remove from heat and assemble the tacos by spooning the turkey mixture into lettuce leaves.
- Top with tomato salsa and garnish with fresh coriander.
Notes
You can add other low FODMAP toppings such as grated cheese (if tolerated) or lactose-free sour cream.
